01 / ABOUT THE PLACE

About this place

Tonkotsu Shiro is Isshindo's signature bowl, prized for its clean, gentle profile without the heavy gamey scent often associated with pork-bone broths. Slurped alongside thin noodles dressed with wood-ear mushrooms, shredded nori, and chashu pork, it leaves plenty of room to tweak flavors using table condiments such as pickled red ginger, takana mustard greens, crushed garlic, and sesame seeds. A complimentary kaedama service lets diners call for extra noodle portions at their preferred firmness, including extra-firm harigane.

Beyond the staple white bowl, the kitchen crafts variations like Tonkotsu Kuro, scented with roasted garlic oil, and Tonkotsu Aka, spiked with house-made spicy miso. Diners can tailor their meal to the day's mood—opting for mild depth or spicy richness—along with a choice between thin and thick noodles.

Isshindo's menu reaches well past ramen into hearty set meals, including moderately spiced mapo tofu, Japanese fried chicken (karaage), and vegetable gyoza. Each set comes with soup and pickles, fitting naturally into everyday neighborhood routines when accompanied by a second bowl of rice.

A wide range of pocket-friendly small plates—such as smashed cucumber, century egg, and chilled spicy gizzard—pairs effortlessly with draught beer, highballs, or a Hoppy set. With both counter and table seating available, the space welcomes everything from a solo post-work bowl to a relaxed evening lingering over appetizers.
